Steps to Make Adai

Wash and soak one cup of parboiled idli rice.

Wash and soak one-third cup of channa dal, one-third cup of tur dal, and one-third cup of moong dal, along with one teaspoon of urad dal, in a separate vessel.

After an hour or two, when the grains and dal are soft, wash them again.

Grind the soaked rice with 6 dried red chillies, 1 teaspoon of aniseeds, a big saunf, and 1 inch of cinnamon in a mixer until it is a coarse paste.

Add the soaked dal to the mixture and continue grinding until it is a little finer than the initial paste.

Add salt to taste, finely chopped onion, 3 tablespoons of chopped coriander leaves, and finely chopped curry leaves. Blend with enough water to achieve a pourable consistency, and season as desired (approximately 1.5 teaspoons of salt).

Heat a dosa tava (flat pan) with a teaspoon of oil and cook the batter.

Pour a ladleful of the batter on the tava, starting from the edges and spreading it towards the center to form a circle. Fill the spaces in the circle with batter. Pour a teaspoon of oil around the edges and cook on one side for about two minutes, then turn and cook on the other side for the same duration.

Serve the golden, crisp adai hot, accompanied by your choice of coconut or green chutney, table butter, or pieces of jaggery.
